Team cooking is an experiential format that harnesses the power of food—especially when it means getting your hands dirty!
Our team building courses combine the rich Italian tradition of fresh pasta-making with team-working goals, all with the right touch of fun and creativity.
Activities take place in our Academy, located in the heart of Bologna, offering a spectacular view of the iconic Two Towers.
In this unique setting, participants take part in a hands-on workshop: each team works at fully equipped stations, from kneading the dough to rolling out the pasta sheets, all the way to shaping Bologna’s most traditional pasta formats, such as tortellini and tortelloni.
Throughout the course, moments of collaboration and bonding alternate with lively challenges between teams—striking the perfect balance between teamwork and friendly competition.
It’s an experience that strengthens group dynamics and leaves each participant returning to the office with new skills, fresh energy, and a renewed team spirit.
SENSORY EXPERIENCE
Duration: 2 hours / The format is available in Italian, English, and French.
Ready to put your senses to the test?
In this workshop, participants—divided into teams led by a team leader—will begin by challenging their sense of smell:
in a blindfolded quiz game, they’ll have to identify a variety of spices.
Next, guided by our expert instructors and relying on their sight and touch, they’ll roll out a rough yet delicate sheet of pasta, following traditional methods. Finally, using their sense of taste, they’ll create their own filling using the spices they correctly identified.
A panel of Academy judges will decide which team takes the win.
The competition will end with a tasting of everything prepared.
Upon request, a prize ceremony can be arranged, with gift boxes for participants.

TREASURES OF THE DOTTA
Duration: 4 hours / Available in Italian, English and French
Upon arrival at the Academy, participants will be divided into teams and assigned to licensed tour guides.
They will then take part in a quiz game on gastronomic culture, the solution to which will provide the first clue for their treasure hunt through Bologna’s iconic landmarks and artistic gems.
The goal is to reach a series of checkpoints as quickly as possible, using the clues provided by the tour guide. At each stop, teams must take a selfie with the Portici Academy logo as proof of their visit.
Once back at the Academy, points will be awarded based on the time taken and the number of valid selfies.
This will be followed by a hands-on culinary challenge: starting from the traditional flour-and-egg “fountain,” participants will roll out the dough and shape it into classic Bolognese pasta formats, such as tortellini or tortelloni.
The judges of Portici Academy will evaluate the quiz game results, the quality and thickness of the pasta sheets, and the execution of the pasta shapes to determine the winning team.
The event will conclude with a tasting of the dishes prepared.
Upon request, a prize ceremony with gift boxes can be arranged for the participants.

HANDS IN THE DOUGH
Duration: from 1 hour 50 minutes to 2 hours / Available in Italian, English and French
Participants will take part in a hands-on workshop, divided into teams and seated at professional cooking stations.
The experience begins with a fun Quiz Game to test their knowledge of Italian cuisine.
Then, it’s time to get their hands in the dough!
Starting from the traditional flour-and-egg fountain, teams will roll out the pasta dough and shape it into classic Bolognese formats, such as tortellini and tortelloni.
The Academy’s judges will evaluate each team based on their quiz performance, the shape and thickness of the pasta sheets, and the quality of the final pasta forms.
The activity concludes with a small tasting session.
