Course programme:
Fresh pasta and Bologna are inextricably linked as well as Bottega Portici and the figure of the sfoglina. After a fortnightly experience and have formed dozens of spreadsheets for their stores, we have structured a professional course designed for those who want to make the browse their profession.
If you want to open a fresh pasta workshop, expand your business or start a new professional path focusing on a constantly growing profession, here you will find professionalism and experience.
Lunch breaks are included in the price.
The daily schedule is from 8.30 to 16.30.

1° day from 8.30 am to 16.30 pm
- Flour: types and characteristics
- Eggs characteristics, properties differences between fresh, pasteurized and freeze-dried
- Hand dough and the importance of rest
- Rolling Pin Peeling Techniques
- Tagliatelle and its declinations (pappardelle, tagliolini, angel hair), maltagliati
- Portioning: the nests
- Storage methods (fresh, dry, frozen)
- Labelling
2° day from 8.30 am to 16.30 pm
- Green dough
- Filling Balanzoni
- Filling tortelloni
- Stuffed pasta: tortelloni and Balanzoni
- Ragout
- Bechamel
- Lasagna
- Hint of broth for tortellini
3° day from 8.30 am to 16.30 pm
- Filling of the tortellini
- Filling of cappelletti
- Filling of the tortelloni
- Pasta dough for ravioli tortelloni
- Dough for cappelletti and tortellini
4° day from 8.30 am to 16.30 pm
- Pasta in the press
- Potato gnocchi by hand and with the dumper
- Ricotta gnocchi (or grandpa’s goodies)
- Passatelli
- Special formats
- Seasonal and traditional fillings
5° day from 8.30 am to 16.30 pm
- Special flours (whole wheat, burnt wheat)
- The colorful pasta (coffee, tomato, red turnips, with poppy seeds)
- The double sheet technique (with edible flowers or other vegetables)
- Basics of Haccp
- Recipe card creation
- Definition of selling price flat/finished product
- Profit margin/food cost

Participants
The course is confirmed once the minimum number of 6 people has been reached. If it is not reached, Portici Academy reserves the right to cancel or postpone the course.
If the minimum number is not reached, the participant may choose another course/date or request a refund.
Maximum number of participants: 15 people.

If you cancel your class booking within 7 days of the class date, the registration fee will be considered valid for another class of the same type on a different date, or for a class of a different type costing the same or more, subject to a price supplement. Once the seven days preceding the start of the course have elapsed, it is not possible to proceed as above and it will only be possible to replace the participant, subject to notification of name, contact details and personal data to the management of Bottega Portici Academy.
